Subject: [PATCH] Use the LocalStack image healthcheck instead of curl

LocalStack 2026.10.0 no longer ships curl, so the compose healthcheck
`curl --fail .../_localstack/health` never passes and `docker compose up
--wait` reports localstack-main as unhealthy. The image has its own
healthcheck against /_localstack/health, so drop the override.
