Javadoc Markdown formatting

I'd like to migrate a few projects to the Javadoc Markdown syntax and noticed that Spring Java Format doesn't support it yet.

Would you consider adding support for it? Happy to take a look if it's agreed 🙂

This may be as "simple" as upgrading the version of the part of Eclipse that are shaded by the formatter. I say "simple" as we're on a fairly old version at the moment because more recent versions require Java 21. See #415.

FYI, the Eclipse formatter had some issues with Markdown Javadoc:

• javadoc Markdown issues eclipse-jdt/eclipse.jdt.ui#1800

Version 4.41 should bring all the latest fixes.
