Rebrands DirWatch/ADSentinel to dirvex and updates the GHCR image to ghcr.io/onebyjorah/dirvex:latest. Adds a Formerly DirWatch note. Fixes local Docker deploy with a /healthz endpoint, safe demo-only data, HOST_PORT support, and an updated Playwright capture script. Captures real local screenshots and purges stale PNGs. Fully rewrites the README with verified quick start, config table, architecture diagram, and real screenshots. Fixes markdown and Dockerfile lint issues for green CI.
