docs(redis): release notes v5.1.0

Updates doom.config.yml releaseNotes.queryTemplates so the published Jira release notes render on the docs site.

  • base: release-5.1
  • branch: docs/release-notes-v5.1.0

Generated by app-service-doc-release-notes (step 2 of publish-loop).

The three v5.1.0 queryTemplates were still written against the pre-migration
tracker: `project = MIDDLEWARE` (one of them `project = MiddleWare`) plus a
`Feature = "MiddleWare - Redis"` clause. Issues live in ECO now, and the
Feature field is on no ECO screen and set by zero issues, so each query
matched nothing.

Nothing would have failed loudly. The `## v5.1.0` section's three directives
would simply have rendered empty on the published page, and a release whose
Fixed Issues list is blank looks like a release that fixed nothing.

Verified against the live tracker: the corrected `-fixed` query returns
ECO-1078, whose release note is published with ReleaseNotesStatus = Publish.

The v5.0.1 and earlier templates are left alone — those versions shipped
while the issues really were in MIDDLEWARE.
