feat: the index, phase 1: facet schema, 4-digit id ranges, backfill of every demo, index.json and .md twins

Phase 1 of the gallery index.

IndexEntry facets in every Variant.meta.json (kind, subtype, industry, style, motion, interaction, layout, colorMode, density, tech, cost, components, aliases, a11y), typed and validated in checkCatalog.
Reserved 4-digit id ranges per kind in site/src/demos/catalog.ts; existing ids stay valid.
Backfill for all existing demos (inferred: kind, subtype, components, tech; read by hand: style, industry, motion, layout, colorMode).
Emit site/public/api/v1/index.json and a .md twin per id at /gallery/<id>.md; llms-full stays under its cap.
Tests: schema validation, ranges, index output.

Out of scope: any UI change (phase 2).

Working on this in #570 (draft). Branch feat/569-feat-the-index-phase-1-facet. Regression test first, then the fix.
