fix: update LUKSO version and bootnodes

Summary

• Pin the LUKSO variant to the officially supported Geth v1.17.2 release.
• Replace the stale execution bootnodes with the current three entries from lukso-network/network-configs.
• Keep the variant manifest metadata aligned with the Docker build argument.

Validation

• DAppNode SDK manifest and compose validation passed.
• The merged LUKSO Docker Compose build completed successfully.
• The built binary reports Geth 1.17.2-stable.
• The packaged bootnode list exactly matches the official LUKSO configuration.
