Python demo does not run on Windows

**Describe the bug**
Windows does not like one of the characters in the generated Python schema code.

**To Reproduce**
Run 
```
uvx --from 'mote-link[demo]' rerun-demo
```
on a windows host.

**Expected behavior**
Demo should run as expected.
