Pin pnpm 12.2.1 through engines and devEngines.packageManager, matching expo/expo. Enable the global virtual store and set the esbuild and msgpackr-extract builds to true, replacing the placeholders that made pnpm install fail on pnpm 12. CI: switch to pnpm/setup, bump checkout and setup-node to v7, use the matrix Node version instead of a hardcoded 20, and run tests on every pull request.

With pnpm 12.2.1, build, lint, tests and the Markdown link check pass locally. CI on this PR now runs under pnpm 12.
