Feature Request: Allow setting default / preferred video quality per source (plugin)

Use Cases

Currently, Grayjay only provides global "Preferred Quality" and "Preferred Metered Quality" settings across all platforms. However, network conditions, bandwidth costs, and usage purposes vary significantly across different sources (plugins):

1. Split-tunneling & Routing Constraints:

   • Users often use split-tunneling or selective proxy/VPN routing. When traffic for specific sources is routed through bandwidth-capped or higher-latency nodes, users prefer lower default resolutions (e.g., 480p/720p) to conserve proxy bandwidth and avoid buffering.
   • Conversely, for direct-connected or local/privacy-respecting sources with unlimited bandwidth, users prefer higher resolutions (e.g., 1080p/1440p) for the best viewing experience.

2. Platform Bitrate & Stability Differences:

   • Different sources vary wildly in CDN performance and encoding bitrates. Decentralized/third-party platforms or live streams often suffer from buffering at higher resolutions, while major platforms can reliably stream 1080p+.

3. Different Consumption Habits:

   • Users often use certain sources primarily for background listening or podcasts (where 144p/360p is sufficient) without wanting to compromise the default quality for video-first platforms.

Add an option to configure the preferred playback resolution on a per-source (plugin) basis:

1. Allow overriding global quality within each source's settings (e.g., Sources -> [Select Source] -> Default Quality).
2. If set to "Default / Global", it falls back to the existing app-wide preferred quality setting.
3. If explicitly configured, the player will respect the source-specific quality preference when opening videos from that source.
