gemini-2.0-flash was shut down by Google on 2026-06-01, but it is still the default Gemini model, so a fresh install that selects the Gemini provider and does not set GEMINI_MODEL gets API errors.

This switches the default to gemini-3.6-flash (the replacement Google lists for it) in config.py, GeminiProvider, the provider factory, the model-list fallback in config_routes.py, the interactive env setup, .env.example, and the Docker env example and compose default. The docs and compose comments that tell users to run with gemini-2.0-flash are updated too. The pricing table is left as it is.

Not tried against the live Gemini API (no key available). Gemini 3.x thinking is not controlled by _is_thinking_model, which only matches 2.5, so the model's default thinking behavior applies.

Tests: new tests/unit/test_gemini_default_model.py checks the three code defaults (it fails on main); the existing Gemini and checkpoint unit tests still pass.
