docs: point hyperdx refs at the thin chart - #138

Conversation
dfe-infra deploys the dfe-hyperdx chart that hyperi-ci publishes from dfe/deploy/contract.json, pinned by digest in versions.yaml, not helm/charts/hyperdx. Update the two docs that named the old values file.
The edit left a line over 80 columns, which the docs prettier check rejects.

dfe-infra deploys the dfe-hyperdx chart hyperi-ci publishes from dfe/deploy/contract.json, pinned by digest in versions.yaml. Two docs still named helm/charts/hyperdx/values.yaml, which the deploy path no longer reads.
Docs only. README.md is already catalogued in .fork-surface and docs/fork/what-we-changed.md as a whole file, so no catalogue entry moves.
