Upgrade xarray_selafin to uxarray_selafin

Hi!

Recently a lot of great work has been put in allowing xarray to work for unstructured grids using uxarray.

By upgrading xarray_selafin to uxarray_selafin we could profit from the functionality in uxarray. This includes many spatial operations and plotting techniques.

Have you already looked into what would be needed for this upgrade?

This is indeed a useful feature that would benefit the TELEMAC community.
This is planned but not in my pile of things to do right now.

I'd guess the easiest way would be to add a new feature PR directly in uxarray, using xarray-selafin engine reader under the hood.

At least issue #38 needs to be solved before doing so.

I confirm that it is a very good idea to adapt the engine for uxarray! But I do not know the associated effort.
