Update qlog docs for automatic event schema registration

Docs-only change to the QUIC and HTTP/3 qlog guides.

• Updates the HTTP/3 guide to state that HTTP/3 events are now recorded automatically when a connection has a qlog trace; no manual registration is needed.
• Changes the recommended default tracer from the HTTP/3-specific package to the shared qlog package, and updates the redaction example to wrap the shared tracer while keeping the HTTP/3 redaction helper (qlog.md).
• Simplifies the trace creation example in the QUIC guide by dropping the event-schema argument (qlog.md).
