Raise Modals’ minimum supported versions to iOS 17.1 and Mac Catalyst 17 to match Workflow 7.0.0.
Use the official Workflow 7.0.0 release and update the lockfile to remove Perception. Remove accessibility availability checks that are no longer needed.
Validated with all 65 unit tests passing on iOS 17.2 and 26.5, successful builds for both sample apps and Mac Catalyst 17, and passing SwiftFormat checks.
