macos-14 / macos-latest are billed as GitHub "larger" hosted runners even on public repos, so every CI run on them burns the org's Actions quota.

This removes the macOS leg from the CI/test workflow, keeping the ubuntu (and windows, where present) legs intact. No release/distribution/artifact build is affected.
