ci(release): drop unused mockery install that breaks the release - #284

The release job installed mockery with `go install ...mockery/v2@v2`, which now resolves to v2.53.8 and requires Go >= 1.26 while the job pins Go 1.25, so the v0.23.0 release failed before GoReleaser ran. Nothing in the repository uses mockery (there are no go:generate directives), so drop the step instead of pinning a version.
