docs(release): align public preview downloads and desktop packaging - #514

Update public release download documentation and packaging verification: - Update READMEs and macOS/Windows release documentation to the active v1.0.0-preview.20261020 release. - Document ad-hoc DMG assets for arm64 and amd64 architectures, checksums, and SmartScreen/Gatekeeper warnings. - Add scripts/check-download-docs.py and test_download_docs.py to prevent stale download links and verify release asset availability. - Update release-desktop.yml workflow to verify download docs before publishing and include Mac DMGs in public release allowlists. Validation: - python -B scripts/check-download-docs.py passed. - python -B -m unittest discover -s scripts -p test_download_docs.py -v (8 tests passed).
